Veal Cacciatorre

Ingredients:

2 lbs veal cutlet pouded thin
3 cloves garlic
1/4 fresh parsley or
1 tbs dried parsley
2 med onions cut into chunks
19 oz can whole tomatoes
6 oz can tomato paste
1/2 tsp basil
1/2 tsp oregano
1 tsp sugar
1/2 tsp salt
1/4 tsp pepper
1 bay leaf
1 tbs olive oil
1/4 cup red wine



Instructions:

Rub veal with pepper, paprika, garlic powder. Process garlic cloves, parsley & onions. Empty into roasting pan. Process all other ingredients & add to onion in pan. Mix together. Add veal & spoon sauce over it. Cover tightly & roast at 324 for about 1 hour. Check if meat is tender uncover & roast for another 20 min. If desired saute 2 sliced green peppers & 1 pint of sliced mushrooms in to 2bs oil & garnish veal.
