Tuna Potato Puff

Ingredients:

2 cups mashed potatoes
1 med sliced onion
2 large eggs separated
1/2 tsp dry mustard
1/2 tsp tabasco
2 cans tuna, drained
1 cup shredded cheddar cheese
1/2 cup corn flake crumbs


Instructions:

Prehaeat oven to 375. Boil 4 potatoes, Drain. Saute onions in 1 tbs oil til lightly browned. Mash potatoes & onions together with egg yolks, dry mustard & tabasco. Chop drained tuna & add with 1/2 cup shredded cheese. Beat egg whites til stiff & fold into tuna-potato mixture, Mix well & turn into 2 quart casserole. sprinkle remaining cheese & top with corn flake crumbs. Cake at 375 for 45 min. Can be frozen For Pesach: Use soup nuts for corn flake crumbs omit mustard, tabasco,corn flakes add salt & pepper
