Spinach Kugel

Ingredients:

30 oz frozen chopped spinach
1 chopped onion
8 oz sliced mushrooms
2 tbs onion soup mix
3/4 mayo
1 oz pkg soup nuts crushed (1cup)
2 large eggs


Instructions:

Preheat oven to 350. Defrost spinach & squeeze out some of the liquid. Saute onions, sliced mushrooms in 1 tbs oil (reserve 6 slices for garnish). Mix all other ingredients together. Turn into greased square pan arrange reserved sliced mushrooms on top. Bake for 1 hr. Options: 2 tbs ferfel or matzoh meal can be substituted for soup nuts. 2 egg whites and 1/4 egg substitute can replace whole eggs.
