Spinach Cheese Kugel

Ingredients:

2 pkgs frozen chopped spinach
3 large eggs
1 1/2 cups mashed potatoes
3/4 cup shredded cheddar
4 matzohs
2 tbs warm water
salt & pepper to taste


Instructions:

Preheat oven to 350. Defrost & drain spinach well. Beat egg well & add to 1/2 mashed potatoes. Add shredded cheese & chopped spinach. Add salt & pepper. Soak Matzohs in warm water for 3 min. Place between 2 towels to absorbe excess water. Grease a square pan with 1 tbs oil & heat in oven. Lline bottom & sides with matzoh. Spread spinach mixturefilling evenly overr matzoh Cover with remaining matzoh. In small beat remianing 2 eggs & add the rest of the mashed potatoes, cheese & oil. Blend well. Spread over matzoh & score with fork. Bake in oven for 1 hr until top is lightly brown.
