Corn Succotash Soup

Ingredients:

6 tbs margarine or olive oil
2 minced celery stalks
1 med onion chopped
1 large green pepper, diced
1/2 cup all purpose flour
2 cups water or more
2 cups chicken broth or bullion
15 oz can diced tomatoes
one 16 oz can each lima beans, corn
2 cups parve milk
salt & pepper to taste
1 tbs chopped parsley


Instructions:

Saute celery, onion, pepper in margarine in large pot. (5 qt) til translucent. Stir in flour til well blended. Gradually stir in water & chicken broth. Simmer stirring frequently (it can burn easily)until thickened about 10 min. Add diced tomato with liquid into soup. Then add cans of corn & lima beans with liquid & half & half. Cover & simmer about 40 min. until well cooked. Sprinkle with parsley when serving. I usually double recipe. Can be frozen. When doubling recipe, dont double oil ( about 4 tbs more) and 3/4 cup flour max.
