Classic Caesar Salad

Ingredients:

3 Romaine hearts lettuce
1/4 tsp salt
2 cloves garlic, halved
1/4 cup olive oil
3 tbs lemon juice
1 egg yolk or 2 tbs liquid whole egg
1/2 ts Worscestershire sauce
1 to 2 cups garlic croutons
1/3 cup shredded parmesan cheese
2 oz drained anchovy filets(optional)


Instructions:

clean & wash romaine. Cut or tear leaves crosswise into 2" pieces. Measure salt into large bowl. Firmly rub each galic half into salt & discard. Add oil, lemon juice, egg & wocestershire sauce & whisk until creamy. Add Romaine leaves and toss to coat. Add croutons, cheese & anchovies & toss. Serve immediately
