Salad Nicoise OneCuisine: Pesach Category: Entre Servings: 4 Ingredients:4 small boiled red potatoes4 large washed romaine leaves 2 cans drained tuna 1/2 sliced red onion 12 grape tomaotes 2 large hard boiled eggs 1 bunch cooked asparagus or green beans 12 ripe olives (optional) Dressing: 1/4 cup white wine 1 tbs vinegar 2 tbs olive oil 1 clove garlic 2 tbs minced parsley 2 tsp chopped scallions 1 tsp sugar Instructions:Dressing: While Processor is running drop in clove garlic & chop. Add parsley & scallions & process. Add liquids & process. Slice potatoes right after they are cooked & pour dressing on them. On each person's platter arrange romaine. In center add 1/2 can drained tuna. Arrange potatoes, asparagus. tomaotes & 1/2 sliced egg & onion rings around tuna. Sprinkle remaining dressing over them & serve.
