Pine Nut Crusted Chicken

Ingredients:

1 1/3 cups wine
4 chopped garlic cloves
2 1/2 tsp salt
1/2 tsp rosemary
1/2 tsp dried savory
1 chicken cut into 1/8's
1/2 cup breadcrums
2/3 cup (4oz) ground pine nuts
1/2 tsp paprika


Instructions:

Combine wine, garlic, 2 tsp salt, savory & rosemary in samll bowl. Place half marinade in plastic ziploc bag. Cover & refrigerate the remaining marinade. Add chicken pieces to marinade in bag & toss to coat. Refrigerate overnight. Preheat oven to 350. Combine bread crumbs, pine nuts, paprika & remaining 1/2 tsp salt. Remove chicken from marinad & discard the bag with marinade. Roll chicken in crumb mixture & place on lightly greased bakng pan. Drizzle with olive oil Bake chicken covered for 45 min. Uncover & pour the remaining marinade over chicken . Bake uncovered for another hour or until chicken is golden.
