Zucchini Soup

Ingredients:

2 med green zucchini
1 med yellow zucchini
1 minced garlic clove
oil spray
1 med tomato
32 oz hot water
2 chicken bullion
1 tsp basil


Instructions:

Spray saucepan. Add garlic & saute for 1 or 2 min. Slice zuccini & add to pan. Saute for about 5 min. Add little more spray if necessary. Remove seeds from tomato & chop. Add to pan & cook another few min. Dissolve bullion in hot water & add. Simmer for about 10 min. Add basil or oregano or italian seasoning. Blend the soup in pot with magic wand (blender stick) til pureed. Simmer another 2 min. Serve hot.
