Tortellini Salad

Ingredients:

1 lb cooked tofu tortellini or other
1 bunch broccoli flowerets, steamed
2 large red peppers, julienne
1/2 cup thinly sliced scallions
1/3 cup toasted pine nuts
Dressing:
1/3 cup red wine vinegar
1 tbs dijon mustard
salt & pepper
1 cup olive oil
1 tbs minced fresh parsley
1 tbs minced fresh dill
1 tsp dried basil




Instructions:

Combine dressing ingredients in large bowl & mix well to blend. Add cooked tortellini, steamed broccoli, peppers, scallions, pine nuts & toss well. Chill before serving. Variation: Use cheese tortellini & add 1/4 cup grated parmesan cheese when tossing
