Potato Leek Soup

Ingredients:

5-6 leeks
6 tbs margarine
2 stalks celery chopped
1 large onion chopped
3-4 potatoes, peeled, cubed
8 cups chicken stock or bullion
salt & pepper
dill or parsley sprigs (optional)



Instructions:

Cut the roots from leeks & discard outer leaves. Cut each leak in half lengthwise. Rinse thoroughly to remove grit. Slice crosswise in 1/4" pieces starting with white end using enough of the the green to make 5 cups. Melt margarine in soup pot & add leeks, celery & onions. Saute til tender & translucent. Add stock & cubed potatoes. Bring to boil & simmer for 30 to 40 min. or until potatoes are tender. Season with salt & pepper to taste. Process soup until smooth. Return to pot to reheat. Can be serve with dill sprigs. Serve 8
