Potatoes & Tomato BakeCuisine: Pesach Category: Vegetable Servings: 4 Ingredients:2 tbs olive oil plus drizzling2 onions, thinly sliced 8 new potatoes, thinly sliced 4 tomaotes, 1 bunch fresh thyme leaves only Coarse salt & pepper to taste Instructions:Preheat oven to 350. Core & cut tomatoes into 1/4" slices. Spry bottom of 8x11 baking dish. spread the onion slices over the bottom. Arrange the sliced potatoes in single layer over onions. Top with sliced tomatoes. Sprinkle with fresh thyme leave, season with salt & pepper. Drizzle 2 tbs olive oil. Bake for 1 hr or until potatoes are fork tender.
