Tomato & Onion Ratatouille

Ingredients:

2 tbs olive oil
1 red onion, thinly sliced
2 leeks, white part only, sliced
2 cloves garlic, chopped
4 scallions, chopped
1/4 cup fresh chives, chopped
2 tbs fresh rosemary, chopped
1/2 tsp dried hot red flakes
4 cups assorted tomatoes, red & yellow, cored & coarslely chopped
2 zucchini cut into 1/4" pieces
coarse salt & pepper to taste
Grated Romano cheese




Instructions:

In skilled heat olive oil til hot. Add onions, leeks,garlic, scallions & saute over low heat for 10 min. Add rosemary & hot pepper flakes and simmer for another 1 min. Add tomatoes and simmer for 10 min. Add zucchini & salt to taste & cook for another 5 min. Season with pepper Serve hot with grated Romano cheese
