Mushroom Puffs

Ingredients:

4 tbs margarine, butter
1 small onion, chopped
3/4 lb chopped mushrooms
2 tbs flour
1/2 tsp lemon juice
1/2 cup parve whipping cream
salt & pepper to taste
1 pkg frozen puff pastry


Instructions:

Melt margarine in skillet over med heat. Add onion & chopped mushrooms. Saute til liquid evaporates. Add flour & whisk till smooth. Cook for 1 min. stirring constantly. Add whipping cream & lemon juice while stirring until mixture is thickened and bubbly. Stir in salt & pepper to taste. Remove from heat. Defrost pastry for about 1/2 hr or so. Roll out on floured board to 1/8" thick. Cut into 2 1/2" squares, or roll out pastry strips to 16x4 cut into 4 squares and fill and fold like a blintze, or place a heaping teaspoon of filling in center. Grasp 4 corners & pinch together to form a bundle. Drop into min muffin pan cup, or lined cookie sheet. Makes 2 dozen. Cover & chill. Preheat oven to 425, bake for 20 to 25 min or until sides & bottoms are brown. Recipe can be doubled and frozen before baking and used as many as desired at a time. Good with mushroom sauce on top.
