Asparagus & scallions

Ingredients:

3 scallions
1 1/2 lbs asparagus
1 1/2 tbs olive oil
1/2 tsp kosher salt
1/8 tsp frshly ground pepper
2 tbs water
1 1/2 tbs minced fresh tarragon or chervil
1 tbs margarine


Instructions:

Slice scallions thinly on the diagonal and rinse well. Snap off ends of the asparagus and slice on the diagonal into 1/2" slices up to the tips. Set tips aside. Heat olive oil in a saute pan over medium heat. Add scallions & cut asparagus stalks & saute til soft 3 to 4 min. Season with salt & pepper & add 2 tbs water. Cover & cook till crisp & tender, 3 to 4 min. Add asparagus tips, tarragon & margarine. Cook until tips are heated through.
