Barley & Lentil SoupCuisine: Parve Category: Soups Servings: 10 Ingredients:2 tbs olive oil2 med chopped onions 3 med chopped carrots 1 tsp minced fresh garlic 1 small green zucchine cut in half & sliced 1 tsp marjoram 1 tsp basil 1 tsp thyme 2 bay leaves 28 oz can diced tomatoes 8 oz dried lentils, rinsed 1/4 cup barley, rinsed 10 cups water 3 veg or chicken bullions 1/4 cup chopped fresh parsley (optional) salt & pepper to taste Instructions:Heat oil in large soup pot over med heat. Add chopped onions,garlic,carrots & zucchini. Saute for 10 min, then add marjoram,basil,thyme & bay leaves. Saute for another 2-3 min. Add tomatoes, lentils, barley, water & bullions. Simmer for at least 1 hour or until lentils are soft. Stir in chopped fesh parsley before serving. Add salt & pepper to taste.
