Ingredients:

16 oz diced tomatoes
2 tbs tomato paste
1 large onion, diced
1 cup broccoli flowerettes
2 cups cauliflowerettes
1 cup green beans
1 cup zucchini diced
1 cup carrots, diced
1 cup celery, diced
10 oz can chick peas, rinsed
10 cups broth
2 pinches oregano
2 pinches dried basil
salt & pepper to taste


Instructions:

Saute onion in olive oil until browned. Add carrots, celery, zucchini. Saute for 10 min. Add beans, broth, & spices and simmer for 25 min. Add the rest of vegetables & bring back to boil for 10 min. Remove from heat. If too thin add 2 tbs tomato paste. If too acidic try 1/4 cup barley. Variation: diced potatoes, green cabbage,spinach and or other beans can be added or substituted.
