Chicken Queen Vicotoria

Ingredients:

2 tbs oil
8 oz sliced mushrooms
3/4 lb ground veal
2 large eggs, lightly beatern
1/2 tsp onion powder
2 tbs seasoned dry crumbs
8 boneless chicken cutlets
1 pkg puff pastry (30 min to defrost)
Cherry Sauce:
1 (17 oz can sweet dark pitted cherries)
cold water to make 1 cup
2 tbs sygar
1 tbs cornstarch dissolved in 1 tb water


Instructions:

1. Heat oil in skillet, Add sliced mushrooms & saute for 10 min. or until tender, drain. 2. Combine veal & mushrooms in bowl. Stir in eggs, onion powder & bread crumbs. Set aside. 3. Preheat oven to 450. 4. Place cutlets between to sheets of saran & flatten then to even thickness with a mallet. Spoon 1 to 2 tbs of veal mixture in the middle of cutlets & roll up. 5. Roll defrosted puff pastry into large square and cut into fours. Wrap pastry around chicken rolls, folding & pinchin the edges to form a rectangular packet. 6. place packet on lighlty greased cookie sheet. 7. Bake 10 min at 450 & reduce heat to 325 & bake for @ 50 min until golden brown. Spoon Cherry Sauce just befor serving. Cherry sauce: Drain cherry liquid into measuring cup & add enough water to make 1 cup. Reserve the cherries. Combine the liquid, sugar & dissolved starch in a saucepan. Boil while whisking until thickened. Stir reserved cherries. Simmer for another min. Remove from heat. Yields 2 cups
