Hamantashen (yeast dough)Cuisine: Desserts Category: Cookies Servings: 12 Ingredients:2./3 cup lukewarm coffee rich or soy milk2 1/4 tsp dry yeast (1 pkg) 1/2 cup sugar 1 1/2 tsp salt 1 cup whole eggs (4) 1 tsp vanilla 1/2 tsp lemon extract 1 cup softened margarine 4-5 cups flour Filling: apricot butter or prune butter or any pie filling Instructions:In large bowl dissolve yeast in warm parve milk. Let sit for @ 10 min. It will bubble. Stir in sugar, salt, eggs, extract & butter. Beat well, mixture will be lumpy. Add 2 cups flour & beat until smooth & thick. Beat in 2 more cups flour until dough is formed. Add more flour if needed. Kneed dough until smooth & elastic. Grease bowl & place dough. Cover & let rise in warm place until double in bulk @ 1 1/2 hrs. Punch down & roll out 1/4" & cut 4" squares. Place a tsp of filling in center & fold over to shape a triangle, seal. Place on lined cookie sheet & cover with wet papertowels. Let rise till double. Brush with egg wash & sprinkle sugar on top. Bake @ 375 for 25 min or till golden brown.
