Walnut Mocha CakeCuisine: Pesach Category: Cake & frost Servings: 12 Ingredients:8 large eggs, separated1 cup sugar 2 cups ground walnuts 1/3 cup grated choc chips 2 tbs cake meal Frosting: 4 large egg yolks 1 cup sugar 3 tbs instant coffee 2 tbs hot water 1 cup margarine 2 tbs Pesach liqueur Instructions:Preheat oven to 350, grease 9" spring form pan. Beat 8 egg yolks with 1/2 cup sugar until cream colored. Beat egg whites until stiff. Add 1/2 cup sugar, one tbs at a time. Fold egg whites gently into egg yolk mixture. Gently Stir in cake meal, grated chips, ground walnuts. Pour into pan and bake 1 hr. Cool and cut horizontally into layers. Can be baked in layer pans for about 20 to 30 min. Frosting & filling: Beat 4 egg yolks with sugar until lemon colored. Dissolve coffe into hot water and add to egg yolks. Heat in saucepan until mixture thickens and sugar dissolves. Remove from heat & COOL. Beat margarine until light & fluffy and add coffee mixture. Fill & frost cake.
