Salmon Oven Poached

Ingredients:

2 1/2-3 lb salmon filet
1 lemon sliced
1 small onion sliced thin
salt & pepper
1/2 cup white wine
3 sprigs fresh dill
1 stalk celery
1 bay leaf
2 sprigs fresh parsley
1 tsp parve chicken bullion dissolved in 1/2 cup hot water.


Instructions:

Heat oven to 375. Slice fish into serving portions. Place fish in pan skin side down. Season with salt & pepper. Scatter thinly sliced onion,lemon slices,dill & parsley, bay leaf. Pour liquid over fish. Seal with foil. Poach in oven at 375 for @ 20 to 30 min. or until fish flakes easily. Dont overcook fish. When fish is cooled remove from liquid. Serve hot or cold with cucumber dill sauce. can be made ahead one day or can be frozen. Can also be served with Tsatzikie sauce. Substitution for 1 cup wine= 13 tbs watr, 3 tbs lemon juice 1 tb sugar. Mix together let set for 10 min
