Latkes with Parsnip, Carrots

Ingredients:

2 large parsnips
2 large carrots
1 tb grated fresh ginger
2 eggs
2 tbs flour
12 tsp salt
1/4 tsp pepper
oil for frying


Instructions:

Peel & grate vegetables. Add other ingredients and mix. Coat bottom of skillet with oil and heat. Reduce to med and drop heaping tb of mixture in hot oil. when edges start to brown turn over and brown other side. Drain on paper towels. Makes 20. can be frozen and reheated in hot oven. Not tried
