Couscous with tomatoesCuisine: Parve Category: Side Dish Servings: 6 Ingredients:3 cups vegetable stock1 1/2 cups couscous 1 tb olive oil 2 cups cherry tomatoes, cut in half 1/4 cup fresh torn spinach leaves 1/4 cup chopped & toasted walnuts 2 minced cloves garlic 1 minced shallot 1 tbs fresh basil kosher salt & pepper to taste Instructions:Bring stock to a boil. add couscous stir and remove from heat, Let stand for 5 min covered. Heat oil in skilled over med heat, when hot, add sliced tomatoes, spinach leaves, walnut, garlic and shallot. Saute for 3 min. or until tomatoes start to soften. Add basil & toss well. Season with salt & pepper to taste. Fluff couscous with a fork and transfer to serving bowl, add tomato mixture and combine gently. Serve at room temperature.
