Mashed Potates made ahead

Ingredients:

5 lbs potatoes
1/2 cup margarine or butter
1 cup sour cream
8 oz softened cream cheese
1 tsp salt


Instructions:

Peel potatoes and cut into 2" pcs. Place in pot and cover with water. Boil 18-20 min til fork tender. Drain add all other ingredients and mash well. Use mixer if desired. Taste and adjust seasoning. Transfer to shallow baking pan and cover with foil. Keep warm in oven. Can be refrigerated or frozen at this point. To reheat place in preheated 350 oven for 30-45 min or til hot. Serves 10-12 Not tried
