Tomato Beet Soup

Ingredients:

1 onion finely chopped
1 red pepper finely chopped
2 tsp olive oil
1 tsp ground ginger
1/4 tsp honey
1 cup veg broth
14.5 oz tomato puree
15 oz can beets
salt & pepper


Instructions:

Saute onion,pepper in oil over low heat til softened about 3 min. Stir in salt, ginger, honey, broth & tomatoes.. Drain beet liquid into pot, chop beats and add. Bring to a boil and lower heat to a simmer. cook 10 min. Add salt & pepper to taste. Leave chunky or puree. If too thick thin with water. can be served with boiled potato in center of plate For Dairy: Serve with a small amount of sour cream serves 4
