Vegetable Soup Crock Pot

Ingredients:

4 carrots, thinly sliced
5 stalks celery, sliced
2 potatoes, cubed
1 9-oz. pkg. frozen green beans
1 med. onion, chopped
2 cloves garlic, minced
15 oz. diced canned tomatoes
4 C. tomato juice
1 1/2 C. water
1 Tbs. dried parsley
1/2 tsp. dried oregano
1 tsp. herb seasoning (Old Bay Seasoning)
salt & pepper to taste
1 tbs onion soup mix
1 tb sugar
1/3 cup pearl barley
1 can light red kidney beans, rinsed and drained


Instructions:

Combine all ingredients in crock pot insert. Cook on low for 8-10 hours or on high for 6 hours. Adjust seasoning.
