Potatoes, SmashedCuisine: Dairy Category: Side Dish Servings: 6 Ingredients:2 lbs red potatoes 2" ea1 tsp salt 1 bay leaf 4 oz cream cheese 4 tbs butter or margarine salt & pepper to taste 1/4 cup chives(optional) Instructions:Wash potatoes and place in pot with 1" water to cover. Add salt & bay leaf Boil for 35 min or til potatoes are soft. Reserve 1/2 cup potato water and drain potatoes. Ret to pot and let sit to dry out a little. Whisk together salt & pepper, 1/4 cup potato water, 4 oz cream cheese and 4 tbs butter. With flat side of spatula, smash pototoes. Fold in butter cream cheese sauce. add chives. Adjust salt & pepper and a little more potato water if necessary. If serving with meat, substitute, parve cream cheese and margarine.
