Butternut Squash, Gingered

Ingredients:

3 1/2 lbs butternut squash, peeled, seeded
1/4 cup orange marmalade
2 tbs butter cut up or margarine
2 tsp grated ginger


Instructions:

Preheat oven to 450, Line shallow baking pan with nonstick foil. Peel, cut squash into 1 1/2" cubes. Place in large bowl. Combine marmalade, margarine, & ginger in glass bowl. Micro for 1 min, stir til melted. Toss with butternut squash until evenly coated. arrange in single layer and Roast for 25-30 til squash is tender and glazed. Serve 12 Tip: Cut squash and bag day before. Make mixture and ref. then proceed when ready. Not tried
