Ingredients:

2 large eggs separated
1/2 tsp salt
1/2 cup matzo meal
sugar
cinnamon
oil for pan


Instructions:

Beat eggs whites with salt until peaks form. beat yolks with 2 tbs water until thick and light yellow. Gently fold in egg whites into yolk mixture and slowly add matzo meal a little at a time. do not overmix. Heat oil in a 7" fry pan unitil very hot. Gently fold in Batter. It should cover the whole pan. Turn after the bottom side is completely done. Flip over very gently and brown otherside. Turn onto a paper lined plate. Serve immediately with either pancake syrup of sprinkle cinnamon & sugar on top.
