Right Side Up Cake

Ingredients:

3.5 oz almond paste
2/3 cup sugar
1/2 cup margarine or butter room temp
3 eggs room temperature
1 tsp vanilla
1/4 tsp almond extract
1/2 cup sour cream or plain yogurt
2/3 cup corn flour
2/3 cup flour
3/4 tsp baking powder
1/4 tsp salt
powdered sugar for dusting
Topping:
1 1/2 cups fruit or berries (chopped if large)
2 tbs sugar



Instructions:

Heat oven to 375. Grease 8" spring form pan, dust with flour. Line and grease again. In medium bowl toss fruit with sugar and set aside. In processor, combine paste with sugar. Pulse till combined. Add margarine and pulse again till well combined. With machine running add eggs one at a time till well blended. Scrape often. Add vanilla , extract and sour cream. Blend til smooth. In bowl mix dry ingredients to blend and add 1/2 at a time and blend 3 pulses each time & scrape down. After well combined pulse 3 or 4 more times. Pour int prepared spring form pan and smouth out the top. Pile fruit tossed with sugar on top and bake for 1 hour or til center is lightly browned and springy. Let stand for 10 min and remove from pan. Dust with powdered sugar and let come to room temp before cutting and servind Not tried
