Tahini Sauce

Ingredients:

1/2 cup sesame paste (tahini)
1/4 cup water
1 tablespoon lemon juice
2cloves garlic, peeled
1 teaspoon parsley flakes
1 teaspoon salt
OR
2 garlic cloves
1/3 cup lemon juice or
juice of 2 lemons
1/2 cup prepared tahini
1/4 cup water
1 tsp chopped fresh parsley
garnish with scallions


Instructions:

1.while processor is running drop in garlic, parsley leaves to chop. Add tahini, water, lemon juice, garlic, parsley and salt in food processor.Taste and adjust seasoning such as lemon juice, garlic, salt and pepper. If too thick add water 2 tbs at a time 2.Blend well, until thin and creamy; chill in refrigerator 1 hour before serving. Will keep in ref a few weeks. Maybe thinned with more water when ready to use. Mash cloves with a little salt. Add lemon juice. Mix prepared Tahini Sauce so it is distributed in its jar before adding to juice mixture. Whisk with a little water til it is the consistency that you like. Add chopped parsley. Garnish with Chopped scallions when ready to serve. Keep refrigerated and mix well when reusing.
