Vegetarian Stuffed Cabbage RollsCuisine: Parve Category: Entre Servings: 12 Ingredients:FILLING:1/2 cup rice 1/2 tsp consomme parve 1/2 cup red lentils 1 tb craisins (may use currants, raisins, or apricots) 1/4 c. toasted walnuts, coarsely chopped 1 lg. onion, diced 1 lg. green or red bell pepper, diced 2 cloves garlic, minced 1 lg. eggs, beaten 2 tbs extra virgin olive oil 1 lg. cabbage SAUCE: 1 (28 oz.) can tomatoes sauce 1/4-1/2 cup brown sugar 1/4 cup lemon juice or rice vinegar 2 tsp. ground cinnamon Salt and pepper to taste Instructions:Cook rice according to pkg direction add consome powder to the water. Cook the lentils in 3 cups of boiling water until soft, check after 10 min. Saute the onion, pepper, and garlic in olive oil. In a large bowl, combine the sauteed vegetables, rice, lentils, walnuts & craisins. Taste and adjust seasoning. May need more salt pepper or other flavors you like. Boil a large pot of water and core cabbage and gently pry loose leaves and boil till softened. Cool. Fill each cabbage leaf with about 1- 2 tbs beginning at the thick end of the leaf. Begin to fold this over, folding the edges in as you go to make a neat roll. Place the rolls in large oblong pan (9X12), shred the rest of cabbage and aadd, covering all with the sauce. To prepare the sauce, combine the tomato sauce, vinegar, brown sugar and cinnamon in a large saucepan. Adjust the sauce to taste. It should have a sweet sour taste. May need more sugar and vinegar. then add the salt and pepper. Simmer for 10 minutes. Cover cabbage rolls with sauce and bake covered at 350 degrees, 45-60 minutes.
