Meat Sauce for Spaghetti

Ingredients:

2 tbs olive oil
1 l b ground beef
1 med oinion chopped
1 garlic clove minced
16 oz can tomatoes, or diced
4-6 oz tomato paste
4 tbs sugar
2 tsp oregano
1 3/4 tsp salt
1/8 tsp cayenne
1 bay leaf


Instructions:

About 1 hr ahead: In large saucepan over med heat, in hot oil, cook ground beef, chopped onions and garlic til meat is well browned. spoon off excees fat. Stir in tomatoes and liquid and reamining ingredients. Reduce heat to low and simmer covered for 35 min or until sauce is thick, stirring occasionally. If sauce is too thick add water or bullion with water. Taste and adjuist seasoning such as salt & pepper. Makes 4 cups of sauce enough to serve over 16 oz spaghetti, cooed for 4 main servings. Variaton: substitiute Tomato Sauce for diced and only 2 tbs paste.
