Pesach Apple PieCuisine: Parve Category: Pies, pastry Servings: 8 Ingredients:5 granny smith apples½ cup potato starch 5 eggs ½ cup oil 1 cup sugar ¾ tsp cinnamon 1 tsp vanilla sugar - TOPPING: 1¾ cup coarsely chopped walnuts (not ground) 1/3--½ cup sugar Instructions:Preheat oven to 350F. Peel and core apples. Slice apples into rings. In a large mixing bowl, combine the flour, eggs, oil, sugar, cinnamon and vanilla sugar. Add apples to the bowl and coat well. Combine walnuts and sugar. Place half of the topping on the bottom of a round pan or pyrex. Layer apples neatly. Pour remaining egg mixture on top. let mixture settle into the apples. Sprinkle with remaining topping. Bake uncovered for 1 hour or until golden brown.
