Ingredients:

1 lb ground beef
1 large chopped onion
1 tbs oil
1 large eggplant
16 oz tomato sauce
20 oz tomato puree


Instructions:

Heat frying pan add beef & keep breaking up ground beef & brown. Drain completely & remove from pan. Add oil & cubed onions & peeled cubed eggplant. Saute until eggplant is soft & can be mashed. Return browned beef to pan & simmer until well blended. Add tomato sauce & puree. If too thick add more tomato sauce. Add spices & simmer 10 min more. Serve on cooked pasta or layered for a lasagna or serve on bread.
