Gazpacho 2Cuisine: Parve Category: Soups Servings: 8 Ingredients:4 large fresh ripe tomatoes (peeled and seeded)1 large cucumber (seeded) 1 green bell pepper (seeded) 3 tbsp. fresh lemon juice 2 large onions (chopped) 69 oz. tomato juice 1/2 tsp. each salt and pepper 1/4 cup olive oil 1/4 cup vinegar GARNISH 1 cup croutons 2 medium size, ripe tomatoes (seeded and diced) 2 medium cucumbers (diced) Instructions:Place 4 tomatoes, 1 cucumber, green pepper, lemon juice, onions, tomato juice, salt, pepper, olive oil and vinegar into a blender. Mix on medium speed until all is blended. Pour into a bowl and refrigerate. For best results, make this a day or 2 in advance. Serve cold. Serve garnish as side dishes to spoon onto soup when served.
