Salmon Casserole

Ingredients:

4 cups breadcrumbs or croutons
2 6 oz can drained salmon
3/4 cup chopped onions
1 cup diced celery
1/2 cup diced green pepper
1/2 cup mayo
4 large eggs
2 cups milk
1 can cream of mushroom soup
1/2 cup grated cheddar


Instructions:

Preheat oven to 325. Spread 2 cups breadcrumbs on bottom on 3 qt casserole. Mix together salmon,onion, celery, pepper & mayo. Spread over crumbs in casserole. Cover with remaining breadcrumbs. Beat eggs with milk & mushroom soup and pour over bread crumbs. Cover & refrigerate overnigh. Top with cheddar & bake for 1 hr & 15 min.
