Eggplant & Potatoes-(My Mothers Recipe)Cuisine: Parve Category: Side Dish Servings: 6 Ingredients:2 eggplants, peeled, cubed2 large onions 2 tbs olive oil salt & pepper to taste 1 large potato serves 2 Instructions:Chop onions or cube. Heat oil in saute pan. Add onions & eggplant and seasoning. Saute until eggplant is completely soft and mushy. It takes at least 1/2 hour or longer. Boil potatoes and mash with a little margarine.
