Breast of Chicken Pecan

Ingredients:

4 boneless chicken 6-8 oz ea
flour for dredging
4 egg whites
1 cup pecans
2 1/2 cups breadcrumbs
Honey Mustard Sauce


Instructions:

Process pecans & breadcrumbs until fine. Season Chicken with pepper & garlic, paprika. Dredge with flour, then in beaten egg whites, then in Pecan breadcrumb mixture. Saute in a non-stick pan with canola oil on low heat til golden brown. Turn and finish in 350 for 10 min. Slice & top with honey mustard sauce.(Recipe under sauces.) Cook chicken in non-stick pan Dijon mustard works best because of its intense flavor Use plain breadcrumbs for coating. Not tried
