Fillet of Sole with LeaksCuisine: Parve Category: Fish Servings: 6 Ingredients:2 tbs olive oil1 med sliced leeks (white & light green only) OR 1/4 cup chopped onion 1 large clove garlic, minced 1/4 tsp dried thyme (optional) 1 cup chicken or onion soup broth (parve) 2 tbs dry white wine 1 dried tomato optional 1 lb sole filets 1 tbs flour Instructions:Preheat oven to 450. Heat oil in large skillet over med heat. Add leaks, garlic, thyme. Saute til leaks are tender about 5 min. Add flour & stir until completely dissolved. Add wine, simmer for 5 min. until all liquid is absorbed. Drizzle in hot broth and mix. Simmer until sauce thickens about 5 min. Season sauce with 1 tsp more of dry chicken broth if necessary. Line pan with Release Foil if available. Layer 3 to 4 sole filet @6 oz. for each portion. Spread 2 tbs of sauce on each portion & sprinkle fish with Paprika, Dust with breadcrumbs. Bake for 15 min && then broil for 3 to 5 min. Garnish with Orange zest (optional). Transfer to plates & serve with baked potatoes & vegetable.
