Chicken Thighs with Herbs

Ingredients:

1 med onion, chopped
1-2 tbs. fresh mixed herbs (tarragon & sage)
2 tbs tahini
1/4 cup oil
flour for dredging
6 boneless, skinless chicken thighs or 4 chicken cutlets
Chopped frsh parsley for garnish
lemon wedges for serving


Instructions:

Process onion, herbs & tahini. Add tsp oil thru feed tube to make a thick, smooth paste. Do not let it get too thin. Put flour in shallow bowl. Place chicken in another bowl. Rub paste over chicken, then dredge each piece in flour. Gently shake off any excess flour. Coat again with paste and dredge once more with flour. Heat oil (1/4") in skillet. when oil is hot add chicken & fry 4 min on each side til well browned and cooked thru. Garnish with parsley & serve with lemon wedges. Serves 4 Didnt work too well. Try: Pound cutlets to thin for quicker cooking. Add egg, a little water and flour to herbs, onion & tahini and make a thin batter. Dip cutlet in batter & drain slightly. Dip into matzoh meal and fry in oil. Drain on paper towel.
