Choc Mousse 2

Ingredients:

8 oz bitterweet choc
1 tbs brandy
2 tbs cocoa
5 tbs water
1 tsp expresso instant powder
2 eggs separated
1/8 tsp salt
1 tb sugar
1 cup whipping cream with 2 tbs



Instructions:

Chop choc into small pieces & melt in double boiler. Add cocoa, water,coffee, brandy. Whisk egg yolks with salt & 1 tb sugar til lemon colored. Add to choc mixture a little at a time until well blended. Whip egg whites to soft peaks add 1/2 tbs sugar & whip til firmer. Fold a 1/4 whites into choc mix. Mix well and then fold in the rest gently. Whip cream into soft peaks and fold into choc mixture. Spoon into serving dishes. Cover with saran. chill for 2 hrs. Add a little whipped topping and choc shavings. serves 6-8. Not Tried.
