Asparagus with Gremolata

Ingredients:

3 lbs asparagus, trimmed
Gremolata:
1/4 cup chopped parsley
1 tb grated lemon zest
1 tb olive oil
1 tsp minced garlic
1/2 tsp salt
1/4 tsp pepper
1 cup cherry tomatoes, halved


Instructions:

Heat 1inch of water in large potted fitted with a steamer basket. Steam asparagus 6 min or til tender. to prep Gremolata:Toss parsley, lemon zest, oil, salt & pepper in small bowl until well mixed. Remove asparagus from steamer to baking pan, Toss with sauce. arrange on serving platter, sprinkle with tomato halves. Serve warm or room temperature. Serves 12 Planning Tip: Asparagus can be steamed up to two days ahead. Warm to room temperature or micro, then toss with sauce and serve. Serves 12 not tried
