Chocolate Pistachio Bow tiesCuisine: Parve Category: Cookies Servings: 12 Ingredients:Dough:1 cup unsalted butter or margarine softened 8 oz cream cheese, or tofu 2 tbs sugar 2 1/3 cup flour Filling: 6 tbs butter or margarine cut into pieces 4 oz unsweetened choc chopped 2/3 cups sugar 2 large eggs beaten 2 tbs+2 tsp flour 1 large egg beaten with 2 tsp water for wash 1/2 cup finely chopped pistachios powdered sugar for dusting Instructions:In mixer bow, beat margarine, cream cheese and sugar on med speed until smooth & fluffly Reduce mixer speed and gradually beat in flour until dough comes together. With floured hands divide dough into quarters, shape into squares 1" thick & wrap in saran and ref for 1 1/2 hr or until firm. Filling: Melt margarine and choc in microwaver on low until melted (i or 2 min) Stir in sugar, then egg and flour until well blended. Beat with wooden spoon 1 min until mixture is shiny and smooth and gathers into a ball. Ref until firm and thick, about 1 hr. Roll out each square between 2 sheets of saran, into a 9 1/2" square. Trim to 9" and cover with saran slide on baking sheet and ref. Roll out remaing dough and repeat. Chill for 20 min. Measure out 36 rounded tsps of choc mix and roll into logs. Rechill so they remain firm. Heat oven to 350, Line cookie sheets with parchments. Cut one dough square at a time into 9 3" square, place a choc log in center and lightly dab wash on 2 opposite corners and bring them together in center and seal. Brush with wash and sprinkle with pistachios. Bake 15 min or until edges are golden. Cool on wire rack. Dust with sugar before serving. Makes 36 cookies Keep airtight or freeze.
