Barley & Mushrooms Oriental

Ingredients:

2 2/3 cup chicken broth (parve)
1 1/3 instant barley
2 tbs olive oil
1 cup thinly sliced carrots
1 cup thinly sliced celery
2 cloves garlic, minced
1 cup sliced mushrooms
1/2 cup sliced scallions
2 tbs soy sauce


Instructions:

Bring chicken broth to boil, add instant barley, reduce heat, cover & simmer for 10-14 min or until tender. Heat oil in skillet & & saute carrots, celery & garlic til slightly cooked. Add mushrooms & scallions & saute for another 2 to 3 min.. Add soy sauce to cooked barley. MIx well & heat through. Taste & adjust seasoning. May need salt & pepper Can be frozen
