Israeli Couscous

Ingredients:

2 garlic cloves,coarsley chopped
2 tbs olive oil
1/8 tsp salt
1/8 tsp pepper
1 green zuchini,peeled, diced
1 yellow squash, diced
12 cherry or grape tomatoes
1/2 cup chopped red onion
4 bullion chicken soup
20 oz water


Instructions:

In pan,heat oil & saute garlic with vegetables, diced onions til translucent. Remove from pan & add Israeli couscous & toast till golden. Add hot chicken stock & cover & simmer til water is absorbed about 15 min. & couscous is tender. Stir in vegetables & heat through
