Toasted Couscous with Veggies

Ingredients:

2 tbs balsamic vinegar
1/4 tsp dijon mustard
1 garlic clove, chopped
1/4 cup olive oil
1/8 tsp each salt & pepper
1 small green zuchini, peeled diced
1 yellow squash, unpeeled, diced
8 cherry tomatoes, cut in half
2 tbs red onion finely diced
16 oz chicken bullion
1 tbs olive oil
8 oz pkg Israeli couscous (pasta)


Instructions:

In jar pour vinegar, mustard, garlic, olive oil, salt & pepper. Shake until mixture emulsifies. In bowl combine zuchini, squash, tomotoes, onion. Pour half the marinade over veg let stand at room temperature for 15 min. Heat chicken stock in pot .Keep warm. Saute veg for 6-8 min or until translucent. Use slotted spoon to remove veg, leaving marinade behind. Add couscous to pan toast until lightly browned over med heat. Add chicken stock & bring to boil. Simmer covered for 8-10 min or until couscous is tender. Add more water if needed. Stir in vegetables & heat through. Variation: Omit vinegar. Saute vegetables with the other ingredients. Follow the rest of directions. Adjust seasoning & serve warm
