Fillet of Sole with CapersCuisine: Dairy Category: Fish Servings: 2 Ingredients:1 lb sole fillets2 tbs flour 2 tbs peanut oil 2 tbs butter 1/2 cup parve chicken broth juice of 1 small lemon 2 tbs capers,drained pepper to taste 2 tbs chopped parsley dusting of flour for thickening Instructions:Flour fillets. In frypan, heat oil & butter, fry fillets on high heat for 2 or 3 minutes. transfer to warm serving plate & keep warm. In same frypan, add chicken broth & bring to boil, add lemon juice & capers & dusting of flour to thicken slightly. Season with pepper, sprinkle with parsley & pour over warm fish & serve.
