Melon Soup

Ingredients:

1 cantaloupe melon or honeydew
1 cup orange juice
pinch of salt
1/2 cup dry white wine, such as chablis or Chardonay
2 tbs honey to taste
1/4 cup Splenda or sugar to tste
1/2 cup parve whipping cream or
Parve half & half or soymilk
10 mint leaves (optional)
1/2 pint raspberries or blueberries or decoration


Instructions:

Remove melon flesh, discard rind & seeds. Cut into cubes & puree in processor or use blender, until smooth. Add orange juice, salt, wine & honey. Add parve whipping cream. Taste and adjust sweetness with either Splenda or more honey if necessary. Stir in shredded mint leaves, leaving 4 for garnish. Chill. Serve cold & top with berries & mint leaves. If frozen whipped cream is availabe, a small scoop can be added in center of bowl when serving. Serves 4.
