Ingredients:

4 eggs
2 cups water
2 cups flour
1/2 tsp salt
Filling:
1 lb farmer cheese
2 egg yolks
1/4 cup sugar
1 tsp vanilla


Instructions:

Process eggs, add water & process. Add flour & salt. Mixture should be runny. Heat 7" skilled with a little butter. Pour 2 tbs mix & rotate skilled to cover. Pour excess back. When blintz is done (lightly brown) Flip out of pan onto paper towel. Repeat. when skillet is hot, very little buttter is needed. Pile one on top of the other. Combine filling until well mixed. Place a tbs on half of the blintz and fold over like an envelope. Then the sides in and the top down. Can be saute in butter until golden brown. Or you can place in 375 oven on a greased cookie sheet & brush butter or spray and bake for a half hour or more until well done. Makes about 20 blintzes. Can be frozen
